In order to change the "Read more" text to the Promoted posts View, you should make the following changes:
1. Edit your Promoted posts view through Home » Administration » Structure » Views
2. Click the Content: Link field
3. Change the "Read more" text and Apply (all displays) this change
4. Finally Save your view
